This allows me the confidence and grace to craft a dinner knowing that I am executing properly, which leads to soigne and memorable dining experiences.
I can cook for a Family or Principal on short notice or in a time of emergency and I am used to filling in when there is a gap in the usual rotation of chefs--quickly excelling and contributing to the system.
